Here's what I currently do:

I email the customer an outline of the project, estimate of the price, and the terms. If they agree, they will send an email stating that they agree to those terms.

Would that be considered enough proof, if say I had to take it up with paypal, etc?

It's not enough proof in a court of law.

A signature is required to legally bind a contract. The signature can be via an electronic form like a fax, an e-mail is not acceptable.

It could possibly be acceptable for Paypal, but it is so simple to edit e-mails and fake this.

at 16 a signature is not legally binding.. it must be co-signed by a parent?
