As for running blackjack hands through a stats program, that's really not necessary. If you don't know how to play, you can just go to http://en.wikipedia.org/wiki/Blackjack and there's a chart telling you what to do in each situation.
I know how to count cards, but stats programs can record how many cards of each are left and stuff like that. The stats programs can compile have far too much behind them for a human to do.

I've never actually done this, but I know how the stats work and can imagine a program is not that hard to build.

I've never played blackjack online, but I just assumed that the cards are dealt completely randomly, making counting cards online impossible. Is that not how it works?

If the cards are shuffled at the end of every hand in blackjack then yes card counting has no effect.

If you don't push with a high pair, you will get people calling you, and getting lucky with the flop/turn/river. If you do push, people holding a 7,2 will fold. In this situation, the guy probably didn't know how to play poker and called an all in call with nothing. The OP did everything right - if he put the guy on a 7,2/crappy hand, he probably should have slow played a little bit. But, first advanced rule of poker = never give your opponent a cheap card, whether that be the flop, turn or river - you are putting your hand at unnecessary risk.

Pre-flop, he has the best hand, why would he not go all in against a 7,2, he has like 95% of winning :S

95% chance....LOL i would prefer a 8,10 of hearts because i can bust 2 pair quicker than his pair or flush. I dont think this guy is telling the whole truth though he may have been betting stupid and the guy didnt fall for his allin and then got lucky

sorry, its something like 87.98% if you want to laugh at my 95%. (ACE, ACE) vs (7, 2 off suit)

I would stop playing poker if you'd rather have an 8,10 than pocket rockets.
