Your Websites XHTML and CSS must be valid by W3C - No tables here.
You can have tables and still be valid. In fact, you can have tables and still be semantically correct. I don't see why you don't allow tables at all, as they are useful for tabular data.. and if you meant no tables for layout, then you should make that known.
